Meaty Red Sauce (with sneaky veggies)
Trying to boost protein? Trying to sneak in your veggies? BUT JUST WANT SPAGHETTI? oh my friends. Then this is for you. With the cold snap we are having in New England this week, all I wanted was a bit of comfort food -and I’m a sucker for spaghetti with a hearty meat sauce. So…that’s what we did.
Ingredients:
2lbs ground turkey (I use 93/7)
2 jars red sauce (I use CLASSICO Roasted Garlic) - don’t throw out the jars - you can use them to re-store the sauce once you make it!)
Pasta (see below for some protein pasta options - I use Banza)
Whatever veggies you want!
For this week, I used red bell peppers on the first batch, second batch, I added spinach, mushrooms & onions.
This is a great way to add a small serving into your meal!
Red pepper flakes (optional)
Instructions:
Don’t be afraid to let that sauce be CHUNKY with the meat & veggies!!!
Cook up your ground turkey (I usually just season with salt & pepper, maybe some garlic powder here)
Add your veggies in half way through cooking the meat, and let it cook int he juices lol.
Once the meat & veggies are all cooked, I pour in the sauce and let it all simmer together. As it simmers, I will add a few pinches of red pepper flakes to give it some kick, add more s&p, some more garlic powder oregano, basil, etc. Season with your heart here.
I will usually start the water boiling for the pasta when the sauce goes in, then turn the sauce pan down to low to let all those flavors marry together.
When the spaghetti is done cooking, drain, rinse, then portion it out and add your sauce on top.
You can put the remaining sauce back in the sauce jars to store until next time!
