Veggie & Chicken spicy honey noodle bowl

I saw a picture of something like this online and was like I NEED THIS. but then I saw the recipe of about 25 things - washing, chopping, cooking veggies, and chicken, and noodles…and OMG it turned me off REAL fast. Then I decided to be creative. Because if I want a meal - I’m gonna make it - and I’m going to find a way to make it faster, and easier than that recipe called for. AND WE DID IT! While there were 4 elements that did have to come together - it all came together in 10 minutes-ish with VERY little cleanup…so overall - it’s still a huge win!

Ingredients:

  • 12oz roasted chicken bites (brand: just bare - but you can use ANY frozen chicken - I almost used the real good so there was a breaded/crunchy texture…but didn’t lol)

  • 114g Rice noodles (I used Taste of Thai spaghetti rice noodles)

  • Bag of frozen stir fry veggies (I used Birds Eye Stir Fry Veggies & Sauce - Teriyaki….then just threw away the sauce cos mine was going to be better lol)

  • 40g sriracha

  • 40g honey

  • 28g soy sauce (I used coconut aminos)

  • 14g rice vinegar

  • 6g sesame oil

Okay - I know that seems like a lot of ingredients for the sauce - but for me - these are things I have on hand most of the time anyway for other sauces & recipes because they are SO GOOD - this was one of the things that pulled me towards this sauce in the first place - that it used a lot of ingredients I didn’t need to shop for! I actually pulled every piece of this recipe from things I always have in my kitchen (see last week’s post about kitchen staples…and you will see the noodles, chicken , and the veggies all in there!)

Instructions:

  • The entire prep/cook time is only about 10 minutes!

  • Get the pot of water on the stove to boil your water! The noodles only take about 4 minutes to cook - so we will time this with the chicken & veggie cook time!

  • Pop the chicken into the air fryer - use package directions - the just bare chicken bites are about 10 minutes.

  • Add some cooking spray to a pan, heat it up, then toss in your frozen veggies - cook according to package instructions. (mine took about 10 minutes)

  • Now that you have your chicken cooking, the veggies cooking…water is working its way to a boil…we are going to make our sauce!

  • Add all the sauce ingredients - sriracha, honey, soy sauce, rice vinegar & sesame oil to a small bowl, and whisk together. lol I know…that took a lot of effort. Go ahead and take a little water break while we wait until the cook time for the chicken & veggies are down to about 5 minutes lol.

  • OKAY - with 5 minutes left to cook on the meat & veg…and the pot of water boiling - add the noodles.

  • Everything should be finishing up around the same time. Strain and quick rinse the noodles, then add them right into the pan with the veggies. Then drop the chicken into the pan too - then add the sauce to your preference. The amount of sauce you made is a lot…but it also gives you enough to set aside if you have leftovers to add as you reheat them. I don’t expect you to add ALL the sauce to the pan - but make it as saucy as you want! And that sriracha does give it a little heat - so that is your warning lol.

  • Serve it up and sprinkle with sesame seeds if you want - then enjoy!

    This would also be really good with ramen noodles - if/when I find a goof brand of GF ramen noodles - I will try it - but that’s basically why I use the rice noodles - well, that and because of that fast cook time!

This recipe made enough for 2 servings - had one for dinner - and will have one serving for lunch (and will add the leftover sauce and maybe some extra chicken when I reheat it!)
