BREAKFAST SALADS

Who says you can’t enjoy a salad or veggies at breakfast? NOT ME! Every day this week was a salad for breakfast. This is a meal that LOOKS like it took a long time, it LOOKS like it was a lot of effort. But in reality - all of them only took as long as cooking the eggs - which was only about 4 minutes. Everything else gets chopped up & put together while you cook the eggs. But if you crave something a bit more in the mornings…this might be something to try out! AND the best part is - you can do it a little different every day and not really add much time to it. Since the macros are super dependent on the ingredients you use - Instead of giving macro breakdowns - I am offering up a few different modifications that I made this week that were delicious - all using similar ingredients. These are SO HELPFUL especially when you are dialing in on your macros, and need a way to really be able to adjust each part of your meal based on the macros that you want to hit. These are VOLUME meals. You can add SO MUCH to these!!

EGG & AVOCADO SALAD BOWL

What I added:

  • 1.5c arugula

  • 50g avocado

  • 1 egg

  • 200g egg whites

  • 20g Cheddar Cheese shreds

  • 1 scallion stalk

  • 1t olive oil

  • S&P

Instructions:

  • crack egg into bowl & add egg whites. I add about 1/8c water (you can use milk, but this is just how I do it don’t come for me lol) and mix it all up.

  • spray pan, and add eggs to LOW heat, sprinkle with S&P - we are cooking them LOW & SLOW so they are not hard crumbly eggs, but ooey gooey eggs. I like to come back to the eggs after each step in the bowl-building so I am regularly stirring the eggs so they cook evenly.

  • add arugula to bowl, drizzle with 4-5g olive oil, salt & pepper, massage into the arugula. (go back to the eggs and stir them around with spatula)

  • slice & weigh out avocado, add to the bowl (go back to the eggs and stir them around with spatula)

  • chop up those scallions (go back to the eggs and stir them around with spatula)

  • By now eggs should be about 80% cooked, go ahead and sprinkle the cheese in, and continue to stir with spatula until they are cooked.

  • Once they are ready to go - add them to the bowl, then sprinkle the scallions on top.

    • you can also drizzle hot sauce on this - which would be DELICIOUS!

BERRY SALAD BREAKFAST SALAD BOWL

What I added:

  • 1.5c arugula

  • 2 eggs

  • 55g raspberries

  • 4-5 grape tomatoes

  • 1T olive oil

  • 10ml balsamic glaze

  • S&P

Instructions:

  • spray cooking pan, and add eggs to pan fry (you can really use any cooking method you want here).

  • add arugula to bowl, drizzle with 4-5g olive oil, salt & pepper, massage into the arugula.

  • wash tomatoes, and chop them up - I like to quarter them (yes even the little grape & cherry tomatoes lol), then add to bowl.

  • wash raspberries and add to the bowl

  • Once eggs are ready - add them to the bowl

  • Drizzle with balsamic glaze

    • you can also top with something like goat cheese, or feta - both are delicious additional toppings!

    • you can also play around with fruits - using strawberries would be delicious as well!!

SAVORY BREAKFAST SALAD BOWL

What I added:

  • 1.5c arugula

  • 2 eggs

  • 80g sliced mushrooms (I used baby Bellas)

  • 4-5 grape tomatoes

  • 1 scallion stalk

  • 1/2T + 1t olive oil

  • S&P

Instructions:

  • add 1/2T olive oil to pan, and add mushrooms, add s&p. cook until browned.

  • here is where you can choose one of two options - take the mushrooms out and set them aside to cook the eggs…OR if you have a big pan, what I do, is I just push the mushrooms to the side to keep them warm while the eggs cook up.

  • add eggs to the pan and fry ‘em up. (again - cook any way you want - I just like to fry them and keep a slightly runny yolk.

  • add arugula to bowl, drizzle with 4-5g olive oil, salt & pepper, massage into the arugula.

  • wash tomatoes, and chop them up - I like to quarter them (yes even the little grape & cherry tomatoes lol), then add to bowl.

  • add mushrooms to the bowl

  • Once eggs are ready - add them to the bowl

  • top with scallions

    • you can also add chopped up cooked bacon, or turkey sausage if you want to boost the calories & protein a bit!

REMEMBER:

There are no rules here. Play around with sweet or savory, play around with different greens, and toppings…

To make the set up easier - I will also keep the bowl on the scale to build it out. Zero/Tare out the scale between each additional ingredient so you are weighing it out to correctly add it into MacrosFirst (or whatever tracking app you use!)
