Chicken Broccoli Ranch Bowl

One of my favorite coaches to follow online @johnnoel (check him out) has a series that is called “it’s not cooking, it’s just mixing things” and it’s amazing - because so often people overcomplicate what it can mean to eat healthy. This week was a tough week for me for my schedule and my personal life - so simple things like this made a huge difference. Because there was ZERO actual cooking. It’s just a couple pushes of a button on the air fryer and microwave. And that’s it. So if you have a busy week coming up, or you just want something simple to put on repeat this week…consider something along these lines!

Ingredients:

  • Roasted Chicken Breast Bites (I used Just Bare brand - a great alternative to the breaded versions if you are looking for a lower carb option)

  • Frozen Broccoli cuts (I use the steam fresh bags - one bag will yield a decent amount for 2 servings)

  • fingerling potatoes (you can use any type of potato…but the fingerling ones are just really cute lol)

  • garlic powder

  • onion powder

  • salt & pepper

  • olive oil

  • Ranch (I use the boathouse classic ranch - super low calorie, yogurt based dressing)

Instructions:

  • I make the potatoes in the beginning of the week as a batch prep, the chicken and broccoli I will make day of since it’s just a few minutes and no actual prep/cook work.

  • For the potatoes:

    • chop the potatoes into bite sized pieces, drizzle with a little olive oil, shake shake shake onion & garlic powder generously - measure with your heart here - then some salt & pepper.

    • toss into the air fryer for 10-15 minutes or until browned and tender, shaking a few times along the way.

  • It’s silly to put instructions here for the rest…just follow recipe on the chicken bag & broccoli bag (I use the air fryer for the chicken, microwave for broccoli) and put it together! Since the broccoli bag makes a good 2-serving amount, I will usually make enough chicken for 2 serving as well then just put the extra chicken & broccoli in a container for the next day.

  • When you’re ready to eat the meal - drizzle some ranch over the top of the meal (or make a little ranch pool to dip your food in lol) and enjoy!
