Fajita Bag

This is for you if you don’t want to eat the exact same thing every day - or if you wan to mix things up dat to day. I know I know…you come here for meal prep ideas. AND THIS IS EXACTLY THAT! Sometimes meal prep is actual meals…sometimes it’s prepping PARTS of the meal to just cut down on prep time throughout the week. A while back, I was at Wegman’s, and grabbed a “fajita mix” in the produce section - chopped peppers and onions…and it was one of those lightbulb moments of “well this is really simple…and really helpful…I CAN DO THIS!” And so I did. At least once a month for meal prep, I will make a fajita bag, using a big gallon ziplock back, and load it up with cut peppers and onions…and use it all week!

Ingredients:

  • 3 bell peppers (I usually grab different colors to make it pretty)

  • 1 red onion

  • 1 large ziplock bag

Instructions:

  • wash the bell peppers, then slice them up with the onions

  • put a folded up paper towel in the bottom of the ziplock bag, then load it up with the peppers and onions (this will absorb some of the moisture keeping it fresh for longer. You can OBVIOUSLY do this in a Tupperware as well - whatever you have on hand!


The best part about this is - you are just prepping raw veggies to use however you want to.

  • veggie scrambles for breakfast

  • add to salads

  • put on sandwiches/wraps

  • sauté up for fajita bowls

  • have the peppers as a snack (maybe skip the raw onions as a part of the snack lol)


Really, just use them however you want! Sometimes we really do need to simplify things so much - and this is one way to do it!
