EGG BITES: the on-the-go-breakfast GOAT
I go through phases of leaning on egg bites as the BEST THING EVER…and every time I come back to them, I’m like…WHY DO I EVER STOP MAKING THESE?? I have two methods I use for egg cups right now. The EASIEST is…I order them as part of my Gardencup delivery that I get each week. They are egg white bites with red peppers and spinach and are delicious. The OTHER way is…I make them at home. A little more work, but still super easy. The thing that made it even easier?? I made a somewhat ridiculous purchase of an egg bite maker from Target for about $30.
The REASON I always used to stop making them was because I would make them in muffin tins, would have to preheat the oven and that for me is just annoying lol. But the little $20 egg bite maker is quick and easy and the cleanup is like 2 seconds. So…down below are two of my current favorite egg bites with the macros - but you can put ANYTHING in them! ANNNYYYYTHING.
Ingredients: each lil recipe makes 4 egg bites (about)
EGG WHITE, SPINACH, TURKEY SAUSAGE & CHEESE (I used DF cheese)
1 breakfast turkey sausage
12g mexican style shreds (I used dairy free Violife…so macros for yours might be different)
90g egg whites
lil pile of chopped spinach - didn’t measure - it was a small amount - probably like 1-3 calories lol.
S&P sprinkle of each
MACROS for 4 bites: P12/C6/F4 CAL: 109
EGG, cheese & scallion
2 eggs
12g mexican style shreds (again - I used dairy free Violife…so your macros might be different)
1 medium scallion
S&P sprinkle of each
MACROS for 4 bites: P12/C4/F13 CAL: 183
Alternative ingredients - LITERALLY ANYTHING
egg, taco meat, peppers, cheese (like a lil breakfast taco situation with prepped protein for the week!)
egg white, mushroom, onion, spinach
egg & cheese
egg white, bacon, cheddar
egg white, tomato, pesto, mozz
egg, tomato, feta
egg white, sausage, red onion
egg, jalapeno, bacon
egg whites, bacon, Swiss (or gruyere), cottage cheese (blend that with the eggs) - Starbucks dupe
Instructions:
in a bowl, whisk the eggs, and your ingredients together.
I used a little egg bite maker from target - so you just fill the silicone cups 3/4, add them to the little maker, and cook for 10 minutes.
BUT you can also make them in a muffin tin - those macros and amounts will be much different as the egg bite cups I used were really small. If you make them in the oven/muffin tin…
Preheat oven to 350°F , spray the muffin tin with cooking spray, add fillings to the cups, then pour whisked eggs into each, filling about 3/4 full, and bake for 15-20 minutes until set, checking with a toothpick for doneness.

You can also get a silicone baking tray for egg bites HERE - but portion sizes will likely be different.
If you are creating your own recipe…go into your tracking app and just add all the ingredients to the recipe…and makes X servings…for me - it would be 4 servings - however many you are making. That way - it will automatically calculate the macros for each egg bite based on the total ingredients you are using.
