BANG BANG TURKEY BOWL
I know…usually the ingredient list is a lot shorter - BUT…and hear me out - almost all of these ingredients were already in my pantry - they are spices and condiments that are used almost daily - so I figured we can handle the longer list today!
Ingredients:
1 lb ground turkey (I used 93/7)
1 Tbsp sesame oil
3 garlic cloves, minced
2 tsp fresh grated ginger (I used 1 tsp ground)
½ tsp smoked paprika
½ tsp onion powder
½ tsp garlic powder (yes, on top of fresh! is there EVER enough garlic??)
3 Tbsp low-sodium soy sauce (I used coconut aminos for this)
1-2 Tbsp sriracha (adjust to taste)
3 Tbsp chicken broth
2 tsp honey
½ tsp black pepper
½ tsp sea salt
2 tsp cornstarch
2 green onions, sliced (whites and greens separated)
Sauce
½ cup mayonnaise (I use lite mayo to reduce calories a bit)
1 Tbsp sweet chili sauce
1 Tbsp sriracha
1 tsp rice vinegar
Toppings/Bowl optional toppings
2 cups-ish jasmine or basmati rice (uncooked) - (I just use a 90s steam pack whatever I had around - In this pic it was a brown rice & quinoa blend)
2 cups shredded carrots
1 English cucumber, sliced
1 cup shelled edamame
1 avocado, sliced
2 cups shredded purple cabbage
½ cup pickled red onions (I feel like this should be mandatory - pickled red onions belong everywhere)
Sesame seeds for garnish
Instructions:
Heat that sesame oil in a large skillet over medium-high heat. Toss in the white parts of your green onions with the garlic and ginger. Let them sizzle for 30 seconds until your kitchen smells amazing. Add the ground turkey, breaking it up with your spoon.
Once the turkey’s mostly cooked (about 5 minutes), add your spices – paprika, onion powder, garlic powder, salt, and pepper.
Mix the cornstarch with soy sauce in a small bowl until smooth – no lumps allowed.
Stir cooking turkey mix for another minute. Pour in your soy sauce mixture, sriracha, honey, and chicken broth. Let it bubble and thicken for 3-4 minutes.
While turkey is cooking - now we make the sauce. Whisk together all sauce ingredients
prep your toppings
Once the rice is cooked - start assembling the bowl adding on the turkey once it’s ready.
I use the sauce sparingly because the flavors in the meat is so good that the sauce should really just be a little bit on top (at least that’s my preference!)
