No-Cook Chicken Taco Bowl

This was planned for this week for 3 reasons.

  1. Heat wave + tiny condo means absolutely no cooking.

  2. I knew this was going to be a busy week.

  3. I LOVE taco bowls.

Here’s the thing. Since we KNOW meal prep is just having food available to us that makes life easier…this VERSION of meal prep is my favorite for busy weeks. Where i’m just rinsing and chopping - and that’s it. BUT it still tastes delicious. Not to mention - this type of meal is a great crowd favorite - build your own burrito bowl so everyone gets what they want, AND you can easily adjust the portions based on YOUR macro goals!!

Ingredients:

  • 5.5oz of grilled chicken

  • 65g black beans

  • 55g sweet corn

  • 2c chopped romaine

  • 45g avocado

  • 1 scallion

  • 1T sour cream ( I used DF Violife)

  • 2T salsa (I used mild Newman’s Own)

  • 15g Mexican shredded cheese (DF Violife)

Instructions:

  • Rinse the black beans and the corn in a strainer

  • Chop up the lettuce, chicken, avocado, add it all into a bowl with the rice & corn, top with the sour cream, salsa & cheese

PROTEIN: 61g

CARBS: 66g

FAT: 17g

CALORIES: 695

FIBER: 17g

This is obviously a large portion salad bowl…so adjust the protein, carbs and fats as needed! But the great part about this type of meal, is that adjusting macros is super easy. Lower the protein? Reduce chicken portion. Lower the carbs? lower black beans portion. Lower the fats? reduce avocado.
