SPICY RICE NOODLES & SHRIMP BOWL
Do you ever have those nights where you look in the fridge, then in the pantry…then the freezer, back to the fridge, and let out a big sigh because YOU DON’T HAVE ANYTHING YOU WANT TO EAT FOR DINNER!!!! And a lot of times it’s THAT thought that leads to “I’ll just order take-out”.
But this past week - I had that moment, and asked…what flavors did I want, if I ordered take-out - what would it be…
I wanted texture, I wanted noodles, I wanted a little bit of heat but not overwhelming. If I ordered out It would be Pad Thai or Drunken Noodles.
I looked around the kitchen…and the ingredients that popped out to me were: rice noodles, some greens, shredded carrots, garlic (duh), frozen shrimp…and about 100 different sauces to decide on later… but at least 5 that would bring some heat. So…we just cook it all up and mix in the sauce!
Took less than 10 minutes, and that moment I took to ask what I WANTED…and then finding a creative workaround - turned into dinner every night so far this week.
Ingredients:
60g rice noodles (I use A Taste of Thai Spaghetti rice noodles)
100g Bok Choy chopped (could sub this out for any dark leafy green - kale, spinach, Swiss chard, etc)
40g shredded carrots
150g raw shrimp (I used colossal shrimp)
25g Zhong Sauce (Fly By Jing) - more or less depending on preference
2T Minced Garlic
1T Olive Oil
Instructions:
The entire prep/cook time is only about 10 minutes!
Get the pot of water on the stove to boil your water! The noodles only take about 4 minutes to cook - so we will time this with the shrimp & veggie cook time!
Mince the garlic, peel the shrimp (and sprinkle with salt & pepper), chop the Bok Choy
Add your olive oil to the pan, once it’s hot…add the garlic to sautéed.
Once the garlic is fragrant…toss in your shrimp.
Add your rice noodles to the boiling pot as your shrimp begins to cook - the noodles will only take about 4-5 minutes.
After a couple minutes, when the shrimp is ready to flip over, flip them then add in the veggies to the pan to cook them all together. At this point, if you need to - you can add an additional drizzle of olive oil, some salt & pepper to all the veggies.
Continue to stir the shrimp & veggies
Once the noodles are done, drain and transfer to a bowl.
Add the veggies & shrimp on top of the noodles
Then you’re gonna add the sauce. The sauce I used does have some heat - so start light…you can always add more. stirring all the veggies and noodles together so the sauce totally coats it.
Serve it up and sprinkle with sesame seeds if you want - then enjoy!

This recipe made enough for 1 serving - but can easily be doubled/tripled if needed! You can also play around with this and use things like stir fry sauce, peanut sauce, pad Thai sauce, etc - changing the veggis, but keeping it all really simple!
