Black bean skillet (veggie dish - but add that additional protein if you want!)
*this is not my picture…mine looked…a little like a massive kitchen disaster - so to draw you in, I’m leaving a more aesthetic pic here lol. BUT this was the inspo for this meal. So it TASTES like this one looks lol.
Ingredients:
1 Medium yellow onion diced
1 green bell pepper diced
1 red bell pepper diced
1 poblano pepper diced
3 cloves garlic minced
grilled chicken (I bought pre-cooked, but would also sub out for like air fried chicken bites - you can also use whatever protein you like!)
taco seasoning
lime juice
olive oil
guacamole (optional)
choice of cheese (optional)
salsa (optional)
sour cream (optional)
Instructions:
Heat a large skillet until very hot - drizzle with olive oil, and add in garlic - cooking it down until fragrant (a couple of minutes)
Add the onions & peppers, and cook down, stirring occasionally about 8-10 minutes
Add black beans & seasoning cooking & stirring occasionally for another couple of minutes.
At the point - it’s basically done!
In hindsight - I would have whipped up some instant rice, and added this into the skillet to beef it up a bit more, and let those flavors really marinate into the rice.
If you are adding additional protein, you can either add it in here in the pan and let cook a little longer stirring to get flavors combined - OR you can just add the protein when you are serving it.
Once you serve it up, use guacamole, cheese, cilantro, sour cream & salsa as toppings as desired.
THAT’S IT FRIENDS!!!
This serves a ton - as the base for a meal - OR as sides. I added grilled chicken to this which I bought pre-grilled - I also have shrimp I may use to add to it. I had it as a side at breakfast too with scrambled eggs - which was DELICIOUS - still using the avocado & sour cream with it.
