Quick & Easy Steak Bites
Okay - no lies - I have these when I’m craving more red meat around the start of my cycle lol. LMAO. I make a TON of it because I will honestly have them with breakfast/lunch/dinner/snacks lol. (that’s an expensive craving…but if it helps me feel like lest of a rabid monster in the beginning of my cycle (iykyk) - I’m here for it. lol. ANNNND they are delicious.
Recipe :
About 2-3lbs of trip-tip, but you can use any cut of steak (sirloin, strip steak, etc) - more or less depending on how much you want for the week.
1/2T olive oil
1T butter per lb steak
8-10 cloves garlic, minced - but you know how I feel about garlic - more is better…so go wild. No such thing as too much garlic.
Dried parsley
salt & pepper
Instructions:
Chop steak into 1-inch cubes as even as possible (so cooking is also even)
Put in a bowl, drizzle a lil bit of olive oil, then sprinkle with S&P and shake around to make sure all the pieces get a little love.
Heat a large skillet on medium-high heat, add a drizzle of olive oil to pan
Add steak bites to pan in single layer DO NOT OVERCROWD THEM…do a couple rounds if you need to- cook for 3-4 minutes/until brown - stir occasionally. The goal in this phase is just to get that nice brown maybe even crisp edges.
Once you have achieved that - remove the steak, remove the excess liquid, add the butter to pan, melt it - then add garlic & dried parsley to the pan & sautéed for 1 minute - till that garlicky deliciousness is making your kitchen smell sooooo good!
Add the steak back into the pan, with that buttery garlic sauce and toss around in the pan for a minute or two then remove from the pan - you’re all done!
Serving:
Store in an airtight container, I like to reheat either stovetop with a little butter, OR in the air fryer for a few minutes.
I add it to scrambled eggs in the morning, to salads (oooh mixed greens salad with blueberries, steak, feta, shallots and maybe a balsamic vinegar???), into wraps, as your actual meal with some roasted veggies…YOU CANNOT MESS THIS UP!
