Breakfast burrito bowl

This was ORIGINALLY supposed to be an actual burrito. But my gluten free life just wouldn’t have it. Because making a burrito with a gluten free wrap just doesn’t work. It fell apart in my hands…because a burrito really does need the “stretchy” “gluten-y” texture that a flour burrito tortilla provides. So - If you CAN have a flour tortilla - throw this baby in that wrap (I would take out the potatoes if I were making the burrito). The burrito only takes about 3-5 minutes to make - and is PACKED with protein. The bowl took about the same - I batch prepped the potatoes ahead of time - and put the potatoes and beans in a Tupperware, only cooking the eggs day-of, and adding the cheese and guac to the container.

Ingredients:

  • 1 egg + 80g egg whites

  • 50g black beans (see below for notes on the black bean mix I used here)

  • Ore Ida Diced Hash Browns (about 1/2c)

  • 1 Wholly Guacamole container

  • 15g shredded cheese (I used sharp cheddar)

Instructions:

  • Let’s start with the black bean mix. You can ABSOLUTELY just have them just strained and rinsed (I would at least mix with some salt & pepper) - but for my mix I also add in a couple spoons of salsa, a couple shakes of cumin, a dash of cayenne, salt & pepper to the strained can of beans and store in a Tupperware container.

  • IF you are making the potatoes…I get the frozen hash browns, and throw them in a pan, sprinkle with salt, pepper, and garlic powder and cook according to instructions. I cooked the whole bag for the week - and divided them up with the beans in a glass pyrex container so I could use them for breakfast throughout the week.

  • Take 1 egg & 80g egg whites and whisk together in a bowl - I just add in a couple tablespoons of water - you can add milk if you want (but as a dairy free girlie…I don’t like DF “milk” in my eggs).

  • Add the eggs to your breakfast bowl with the potatoes, beans, add in a serving of guac, cheese, salsa if you want - or some sour cream…and you’re good to go!

  • If you are making a burrito - I would skip the potatoes, add the beans, egg, cheese to the burrito, and pop in the microwave all together and heat it up so the cheese melts, and the beans are heated up.

  • You can also boost this a bit more by adding peppers and onions to the potatoes or eggs, or add more protein with bacon or sausage!
