Butter Chicken w/ veggies & rice

LOL this is where I start questioning what we are doing here. NOT BECAUSE HTIS WASN’T GOOD - but is it worthy of a “recipe” IDK. lol.

This is very much a HANNAH meal - meaning - we are just heating things up and putting them on a plate. But - part of my meal prep/planning this week took into consideration that I wanted to use a bunch of my frozen veggies, the rice I had in the pantry, and I had an OVERSUPPLY of chicken bites, breasts & tendies in the freezer - I am one person and had about 7 bags of different types of frozen chicken - which seems like maybe 5-6 too many lol.

So - if you’re like me and want something easy - using MOSTLY things you already have at home (I bought the sauce specifically for the things I wanted to use up…that planning came in clutch) - then maybe check this out - OR use this as inspo to be like….I can just air fry some chicken, microwave rice, add some veggies into the sauce pan as you heat up the sauce and we can call that dinner? It seems too easy. BUT IT ISN’T!!! IT IS THE PERFECT AMOUNT OF EASY! GIVE YOURSELF PERMISSION TO MAKE IT THIS EASY!

Ingredients:

  • 1 pack Food Earth Butter Chicken Sauce

  • 180g White rice (really - any rice you want…I used Ben’s Original Long grain white rice for the macros below)

  • 5oz Roasted Chicken Breast Bites (I used Just Bare brand…but you can do this with grilled chicken or even rotisserie chicken to keep it simple!)

  • 120g frozen broccoli

Instructions:

  • Cook the frozen chicken bites in the air fryer at 390/400 for about 8-9 minutes (this is less than the real cook time - but you’ll see why.

  • When chicken is done, transfer to a pan, and add the sauce & frozen veggies to the pan with the chicken. Set at medium-high heat and cover- stirring every once in a while.

  • This will simmer for about 5 minutes or so - while that is going, pop the rice in the microwave.

  • When everything is done - plate & enjoy!!
