The “I didn’t meal prep” breakfast

Sometimes meal prep is planning out specifically what each meal is. This week, I did a “no shopping” week because I had SO MUCH food that I just needed to use up - so this week was all about using what I had - so meals looked a bit different each day. BUT THIS BREAKFAST was there most days of the week. And while this doesn’t look like a normal “meal prep”, we can also think about meal prep as just…having simple foods available so you can create balanced meals in a pinch. This breakfast feels like a treat - and here is why. Tots? YES. nature’s candy (berries)? YES. cheesy eggs? HELL YEAH. This is the kind of breakfast that works for YOU - and likely will also be a crowd pleaser with kiddos. We have protein, we have fiber, carbs…what more can you ask for??

Ingredients:

  • 2 eggs

  • 150g egg whites

  • your choice of shredded cheese (I use violife dairy free cheddar shreds)

  • tots (I use ore-ida crowns

  • your favorite berries or fruit

Instructions:

  • I air fry those tots - about 10 minutes

  • When there is about 4 minutes left for the tots, crack 2 eggs and egg whites into a bowl add about 2-3T water, and whisk up (yeah - I use water instead of milk here…they are still amazing)

  • spray pan with nonstick spray, and add eggs, crack some black pepper and salt, keeping temp around medium, so it cooks slow & low, using a spatula to keep eggs moving around in the pan as they cook. When they start cooking…sprinkle in about 20g of shredded cheese, and keep stirring so they stay soft and scrambling.

  • Add it all to a plate, and enjoy!!

With eggs cooked as listed above…macros for the eggs are:

PROTEIN: 29g

CARBS: 5g

FATS: 15g

The berries add delicious carbs & fiber to your meal - as well as that sweetness!
