HERBY CUCUMBER SALAD

The spicy cucumber salad I posted before was a huge hit…so we are keeping it rolling with another one! This one is light, and fresh, with fresh herbs and a light “dressing” perfect for these hot days that are here!! Great as a snack, or a side for a juicy burger…OR ON A JUICY BURGER!!! lol. No rules here. Just going wild with these cucumber salads LMAO. (wow I need to go out more lol). But FOR REAL…shopping for this salad’s ingredients I already knew I was going to love it. The smell of the fresh herbs was all it took. The dill….THE DILLLLLLL!!! It smelled so so yummy.

Ingredients:

  • 1 large English cucumber (these are usually the really long ones wrapped in plastic) sliced super thin

  • 1/3c large red onion, very thinly sliced

  • 1/4 cup white wine vinegar

  • 1 tablespoon honey

  • 1 teaspoon sea salt

  • 2-3 tablespoons chopped fresh dill

  • Chopped fresh chives - this is really a garnish - but I won’t say no to fresh chives.

  • Fresh ground black pepper to taste

Instructions:

  • Slice up cucumbers really thin - use a mandolin if you have it - I don’t have one because well…there is a 100% chance I would slice off my fingers, so I just slice really thin. No need to peel them - English cubes have a really delicate skin, and can stay on!

  • Slice up red onion also really thin…again - mandolin if you have it, otherwise do your best while keeping all your fingers attached.

  • Add vinegar, honey, salt & pepper to a small jar, and shake it all up to combine for your dressing.

  • Add cucumber & onion into your storage container, add the dressing, add the dill…then shake it up and refrigerate it.

  • It’s ready to eat in 20 min or so…add the chives as a garnish before eating.
