SHRIMP & VEGGGIE STIR FRY

Stir fry…but make it quicker. Make it easier. BECAUSE THAT’S JUST HOW I ROLL. This recipe calls for a little bit of cooking, but also microwaving…makes 2 very big servings that are loaded with veggies and protein and tastes great!!

Ingredients:

  • 1 pouch Long White Rice (I use Ben’s Original Ready Rice)

  • 1 bag frozen stir fry veggies (I use Bird’s Eye Broccoli Stir Fry

  • 14 frozen shrimp (I use the JUMBO shrimp - they are big!)

  • Stir Fry Sauce (I use Tsang Original Stir Fry Sauce)

Instructions:

  • Thaw frozen shrimp, and sprinkle with salt & pepper

  • Heat up a pan with either cooking spray or olive oil - add the shrimp, cook until MOSTLY cooked - opaque

  • Remove the shrimp from the pan, and set aside. Add the whole bag of frozen veggies, and cook according to instructions on bag.

  • Microwave the rice for 90 seconds (or whatever the instructions call for)

  • When veggies are done, add the shrimp and rice into the pan, shake some sauce on it (season to taste. I use about 4-5T)

  • When all combined, let it all simmer and let the flavors combine for a couple minutes, then you’re ready to go!

  • Divide the recipe in half, and enjoy!!

CARBS: 57g

FAT: 10g

CALORIES: 394 calories
